In our workshops in Castelnaudary, our teams prepare this recipe in a broth whose family recipe has been kept secret for 3 generations. In addition, we use duck legs confit with the IGP (Indication Géographique Protégée) Sud Ouest label, and beans from France.

Fresh Cassoulet from Castelnaudary with duck confit
Cassoulet, an authentic dish that is a guarantor of Castelnaudary's culinary heritage and emblematic of the town, is both the spearhead of our House and its first guarantee of quality.
Made by hand, Cassoulet Frais de la Maison is composed of lingot beans simmered in a fresh vegetable broth for which only Madame Rivière mère holds the recipe, to which are added fat duck legs and Toulouse sausage. The duck legs are confit in our workshops, and the Toulouse sausage is made in our kitchens. We use 100% French duck and pork meat.
Fresh Cassoulet is served in its cassole (the dish from which cassoulet takes its name).
