Cassoulet au confit porc

Le cassoulet, plat authentique garant du patrimoine culinaire et emblématique de la ville de Castelnaudary, constitue à la fois le produit fer de lance de notre Maison et son premier gage de qualité. Confectionné artisanalement, le Cassoulet Frais de la Maison est composé de haricots lingots mijotés dans un bouillon de légumes frais dont seule Madame Rivière mère détient la recette, auxquels sont ajoutés des jarrets de porc et des saucisse de Toulouse. Les saucisses de Toulouse sont élaborées et grillées dans nos cuisines. Nous utilisons de la viande de porc 100% origine France. Le Cassoulet Frais est proposé dans sa cassole (plat dont le cassoulet a tiré son nom). Pour 1 personne dans sa cassole de 550g Pour 2 personnes dans sa cassole de 1100g Pour 4 personnes dans sa cassole de 2200g

In our workshops in Castelnaudary, our teams prepare this recipe in a broth whose family recipe has been kept secret for 3 generations. In addition, we use duck legs confit with the IGP (Indication Géographique Protégée) Sud Ouest label, and beans from France.
