Cassoulet with pork confit

Cassoulet, an authentic dish that is a guarantor of Castelnaudary's culinary heritage and emblematic of the town, is both the spearhead of our House and its first guarantee of quality. Made by hand, Cassoulet Frais de la Maison is composed of lingot beans simmered in a fresh vegetable broth for which only Madame Rivière mère holds the recipe, to which pork shanks and Toulouse sausages are added. The Toulouse sausages are made and grilled in our own kitchens. We use 100% French pork.
