    Our fresh recipes are our first guarantee of quality. They are presented in terrines and are ready to be put in the oven. Their ingredients are carefully selected and they are still made by hand. Three authentic regional dishes to discover:

    The outstanding Castelnaudary cassoulet with pork

    Using the traditional recipe, Maison Rivière has prepared a hearty, tasty cassoulet in the image of the region and its inhabitants. The melt-in-the-mouth beans are simmered in a fresh vegetable stock. We then add Toulouse sausage, made in our kitchens, and selected pieces of pork.

    Authentic dishes from the South-West

    In its recipes, Maison Rivière combines the very best of the South-West! Enjoy confit of duck with wild mushrooms, as in the Dordogne, along with its port sauce; try the delicious coq au vin flavoured with Corbières or give in to the chicken, tomato and sweet pepper recipe inspired by the Basque tradition.

    Authentic dishes with lentils

    Maison Rivière has prepared three recipes made with green lentils and Toulouse sausage. The sausage is made in our own kitchens in accordance with the Code of Good Practice. Enjoy the recipe with confit of duck or try the knuckle of pork version!

  • fevoulet

    The incomparable “févoulet”

    If the legend is to be believed, cassoulet was derived from the famous “févoulet”, as the recipe was originally made with broad beans. These were then replaced by haricot beans.
    Maison Rivière carries on the story with its “févoulet”: broad beans cooked in the famous stock, along with preserved duck drumsticks and grilled Toulouse sausage.

    Our goose fat

    Maison Rivière’s goose fat is extracted and filtered in our kitchens. Add a generous spoonful to give extra flavour to your cooking. Use it to make delicious fried potatoes or sautéed vegetables, to cook meat or as a surprising fat constituent for making cakes.
